I was in Minervino Murge, in the heart of Puglia, to discover "A Sud dell'Anima", an extraordinary place in DaRò where the love for the territory and the genuineness of the products meet to give life to a real sensory experience between the aromas and flavors of Murgia.

A small but well-kept room welcomes me that immediately transmits a sense of warmth, amidst stone walls and author's paintings.

The guys who run it, very young and very well prepared, helped me choose the dishes for my dinner, satisfying the tastes and needs of both mine and those of my guests.

Among the dishes I had the pleasure of trying there are the tapas, four tastings of typical appetizers with local ingredients: do not miss the baguette with homemade mortadella, the wet pan with turnips and fried garlic and the pumpkin soup and crusco pepper with rice crackers.

As a first course I chose to taste the Rustichella d 'Abruzzo spaghetti with wild asparagus and mullet bottarga, an exquisite dish that contains the scent of the sea, given by the bottarga, and of the earth, thanks to the flavor of garlic and asparagus.

The dinner continued with a second course based on meat: the veal cheek, cooked at low temperature, delicious and super tender, with a side dish of baked chestnut cream (strictly without other added ingredients!)

To conclude the dessert, a soft ricotta cheese, pear jam and rum-flavored grappa.

A special mention for the dining room staff, attentive to each and every need of the guests, both during the booking phase and during dinner, with alternative proposals and variations suitable to satisfy every food requirement of the guests.

From "A Sud dell’Anima" all products, from sausages to jams, are handcrafted strictly following seasonal availability. This DaRò place has definitely won me over for its creativity, aimed at the future but anchored to the Apulian gastronomic tradition, the great attention to detail and the goodness of its proposal and I can only recommend it to you all.
