Grape, Onion and Parsley Vinaigrette

 

Opinion of the chef

Cut the grapes and "datterino" tomatoes in half. Chop the parsley and onion. Combine everything in a bowl, mix and add extra virgin olive oil (not excessively aromatic), apple cider vinegar, salt and pepper. Leave to rest for about 15 minutes and serve.

 

Nutritionist's advice

A different way of bringing fruit to the table. The sweet flavor of the grape berries combined with the delicate acidity of the apple vinegar make this vinagrette perfect to accompany red or white, roasted or grilled meat. Just be careful not to overdo it, reminding us that a condiment based on extra virgin olive oil remains.
