With the summer, green light for FRUITS and VEGETABLES in red, yellow and orange, in green leafy vegetables.

In this salad we find foods rich in BETA CAROTENE. Beta-carotene is a carotenoid, that is one of the plant pigments (red, yellow and orange) that are precursors of vitamin A also called retinol.

Ingredients

Carrots, chopped pistachios, Gomasio, extra virgin olive oil, apple vinegar

Nutritionist's advice

Prefer raw carrots and seasoned with extra virgin olive oil as beta carotene is liposulable (ie it is absorbed in the presence of fat) and sensitive to light and heat
