Years of traveling abroad between different "kitchens", sometimes too fast and hasty and often unhealthy, gave birth to Alessandro, owner and founder of Trattoria Terra Madre in Alberobello (BA), the strong desire to make known the taste true, and sometimes even extreme, of healthy, pure and genuine vegetables combined with simple and now forgotten dishes. The old house of seven trulli, initially the seat of the incoming tour operator Charming Tours and then the breakfast room for the Rione Pentimi widespread hotel, following the requests of the guests of the widespread hotel, has become a trattoria.

The concept behind Terra Madre's cuisine is simple: serving dishes that are not very elaborate, marrying new preparation techniques, low temperatures, steam cooking, the search for crunchiness, little frying and the absence of butter or vegetable fats.

A welcome of raw vegetables at the beginning of meals in summer, soups and veloutées in winter, carpaccio of vegetables and legumes, combined with real temptations coming exclusively from the countryside of Alberobello. Family-run farms and farms produce homemade bread delivered hot in the morning, prepared with sourdough and “senatore cappelli” flour, slightly bitter goat cheeses, lean and fragrant capocollo, cured meats, burrata, ricotta, scamorze. Set between the dry stone walls and the laughing hills rich in limestone and red iron that light up at sunset, we find the Terra Madre Gardens that represent an explosion of serenity, purity, genuineness and health in an area of ​​about 5 hectares plus another 10 hectares of surrounding woods.

There are many groups of Italian and foreign schoolchildren and adults who book visits to follow effective teaching based on very strong principles: rotation and seasonality, as opposed to consumerism. The activities consist of demonstrations on the different agricultural phases, from composting to harvesting, and on the care of the Terra Madre chicken coop.
