In Manduria, in the land of the beloved Primitivo wine, Andrea Lippi in 2015, flanked by his partner Simona Fusco, decided to give life to the dream linked to the world of hospitality by creating his Masseria del Sale.


The property is located in an eighteenth-century farmhouse, surrounded by nature, centuries-old olive trees and dry-stone walls from Salento.


Masseria del Sale offers Mediterranean cuisine revisited according to the chef's inspiration without ever altering the highly sought-after raw materials so as not to modify their natural flavors.


Simple, balanced and above all natural, the cuisine has a courageous style but which rewards palates who are looking for a new, light and not very impactful way to taste Mediterranean dishes: meats and fish, and fruits de mer, vegetables, often at zero kilometer, they are declined with an original, sensitive style, attentive to the new frontiers of wellness cuisine with attention to seasonality.
